At Casa Colorado we are always cooking fresh, organic meals from scratch, and we are committed to bringing guests seasonal and local foods when available. Breakfast is included in rates, and dinner is offered for $60 per person, including appetizer, main course, dessert and coffees or chai, and a bottle of house wine. We encourage staying home for dinner to enjoy the scenery and the best culinary choices in the area!

What we had for dinner last night at Casa Colorado:

For an appetizer, we started with roasted tomatoes stuffed with herbs and goat cheese, served with homemade french bread. For our main we had wild Sea Bass topped with Rhubarb chutney and accompanied with crisp polenta fingers and sauteed garden greens. For dessert we finished with vanilla creme brulee topped with brandied cherry sauce and an orange glaze.

Dinner mains:
  • Macademia encrusted Halibut with fruit chutney
  • Steamed vegetables with udon noodles, served with original peanut sauce
  • Enchiladas with roasted garlic and poblano sauce
  • Creamy squash risotto topped with caramelized onions and fresh herbs
  • Polenta cake with grilled vegetables, homemade marinara, and local chevre cheese

And of Course, there are Desserts to follow!
  • Warm chocolate cakes with creme anglais and raspberry coulis

  • Old fashioned hot cookies with homemade icecream
  • Seasonal fruit crisps and pies

We are open to receiving requests for dietary preferences or restrictions, and will accommodate them as best as we can with prior notice.






Dinners at the Divide


Invite friends or family to join you for dinner at Casa Colorado! Dine on a pre-selected menu of three to five courses on our deck facing the Continental Divide. There is no better view or way to celebrate great food than to treat yourself and your company to such a special night of dining. We are currently accepting parties of up to 10 adults and bookings may be done in coordination with your stay, as available Monday-Wednesday, and with parties of 6 or more Thursday-Sunday without a room reservation.
