At Casa Colorado we are always cooking fresh, organic meals from scratch, and we are committed to bringing guests seasonal and local foods when available. Breakfast is included in rates, and dinner is offered for $75 per person, including appetizer, main course, dessert and locally roasted coffees, tea or Bhakti Chai. For $100/person add a bottle of house wine. We encourage staying home for dinner to enjoy the scenery and the best culinary choices in the area! We are vegetarian, vegan and gluten-free friendly, and Morgan specializes in these diets after having been a practicing vegetarian and vegan for over 15 years! Pate of exotic Colorado mushrooms, served with homemade crackers, breads and a soft chevre cheese Roasted whole tomato filled with a warm salad of shrimp, quinoa, chevre cheese and fresh herbs Entrée Crisp bone-in chicken breast rubbed with miso and sesame then roasted to perfection. Served over a bed of gingery cabbage, carrot and kale salad.
